The Great Vegetable Experiment: Wks 7 & 8

Alternately Titled: All Hail Avocados!!

Before this experiment, I had never in my life (knowingly) eaten an avocado. But everywhere you turn these days avocados are hyped as the "perfect food". 20 vitamins and minerals! Low in sugar! Boosts nutrient absorption! Brimming with healthy fats! Avocados for president!
I figured we needed to add these babies to our grand experiment.

Week 7: Avocado Chicken Salad
(Adapted from Family Fresh Meals)


2 cups shredded chicken
1 avocado (very ripe)
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
2 tsp lime juice
1 tsp fresh cilantro
1/4 cup mayo
1/4 cup plain greek yogurt

Mix all ingredients. Refrigerate for an hour or so to let flavors combine. Enjoy on bread or crackers or a pita or whatever strikes your fancy.

Verdict: We've always been fans of chicken-salad but this is now our go-to recipe.

Week 8: Chocolate-Avocado Mousse
(Adapted from Food Network)


1/3 cup semisweet chocolate chips
2 very ripe avocados, cut up
1/4 cup honey
1/4 cup unsweetened cocoa powder
2 Tbsp milk
1/2 Tbsp vanilla
Pinch of salt

Melt chocolate slowly in microwave, stirring frequently. Place all ingredients into food processor and blend until smooth, scraping sides as necessary. Spoon into cups and allow to chill for at least 3 hours. (Or stick it in freezer for an hour.)

Verdict: I now make this recipe ever single week. No lie. (I may also make it in secret and then hide the cups waaaay in the back of the fridge so no one else realizes it's available. Shhhh.) An episode of Doctor Who on Netflix + a cup of chocolate-avocado mousse is pretty much my favorite end to a day.
