Need some comfort food to warm your innards and ward off that winter chill? This chicken & biscuits recipe is a wintertime favorite in our house. The almonds put it in a league of its own.
Chickeny Goodness:
1/3 cup butter
1/3 cup flour
2 cups chicken broth
2 cups evaporated milk
1/4 tsp garlic powder
1 tsp salt
1/2 tsp pepper
3 chicken breasts, cooked and cut up or shredded
1 1/2 cups frozen peas, thawed and drained
1 cup toasted sliced almonds
Melt butter in a large saucepan over medium heat. Stir in flour, then add broth, milk, garlic powder, salt and pepper. Mix together and cook until thickened. Stir in chicken, peas and almonds. Heat through and serve over biscuits.
And The Biscuits:
2 cups flour
2 Tbsp sugar
4 tsp baking powder
1 tsp salt
1/2 tsp cream of tartar
1 stick of butter
3/4 cup milk (plus a little more if necessary)
Add dry ingredients and cut in butter till crumbly with a pastry fork. Pour in milk slowly and stir with fork till dough pulls away from sides. Turn out on floured surface, cut out biscuits with a biscuit cutter about 3/4 inch thick. Bake in 11x7 dish at 375 degrees for 26-28 minutes.
